So I have been inspired to do some cooking lately! Yay! Here’s my first creation….Chicken Enchilada Casserole.
2 Chicken Breasts
3 cups Jasmine Rice
1 can no sodium added black beans
2 cans low sodium diced tomatoes in garlic and olive oil
1 jalepeno
1/2 cup red onion
I precooked the chicken and rice, then put it all together and baked for 20 minutes. I added shredded cheese later. You can also add more jalapenos to kick it up a notch! It was delish!
I also made my own hummus last night! It was super easy!
1 can of chickpeas
3 tbsp olive oil
lemon juice to taste
garlic salt, pepper to taste
Just pop this all in a blender and tada! Hummus! I would have preferred actual garlic, but didn’t have any on hand. Also, next time I would spice it up a bit with hot sauce or a jalapeno. Many recipes call for taheni to make hummus, but I don’t really care for it. This works just fine!
